Yeah I read about a few characters who look to have been left out of the show entirely, some of them sound like they'd have been really interesting characters.
Particularly Coldhands, really can't see why they've left him out. I know the theory is that Benjen Stark is he and maybe with his name being used in the last scene to get Jon in place for a bit of knife play, they could have been putting him into our consciousness to (re)introduce him next season.
I've been asking since the first season what the fuck happened to Benjen Stark and I'll be pissed off if the show ends without revealing what happened to him.
On Jon's death, even though I knew it was coming I was saddened. He's grown on me massively this season. I really hope they bring him back in the future, although Kit Harrington has supposedly stated he won't be back next season, although that doesn't mean he can't be back in season 7. But they'd have a hard time keeping that on the quiet.

GoT Spoilers: I did find Coldhands interesting but really didn't mind his exclusion. I was more disappointed by the exclusion of Arianne and Quentyn, who made the Martells much more interesting. Ellaria and the Sand Snakes were terrible in my opinion. I also would have liked to see more of the Brotherhood of Banners and the Sparrows. Uncle Kevan as well. I think we'll get the Greyjoy plot next season.
I think the only reason the used Benjen's name was to troll the book readers into thinking they were finally going to see their theories materialize only to stab us and say, Jon dies today. Not tomorrow.
I think Kit would try to lie about it as long as possible so I still have some hope.

Yeah I suppose you're right. After that final scene he was hardly going to come out and say don't worry folks I'm not dead.
Has the Greyjob plot been covered in the books yet? I've read up a bit about the Greyjoys, Theon's uncles and such.
If the show has completely caught up with the book now I might start reading them. The only reason I didn't want to read them yet is because I wanted everything in the show to be new to me.

The Greyjoy plot is probably the only plot the show has not covered yet (Hope Eric can correct me in case my memory has failed me).
What have you read about the uncles? If you've read the general gist of it, there really isn't much the books will spoil imo.

I've read a little too much, had to stop myself before ruining too much for myself.
I know Balon is dead and the last thing I read was something to do with one of his Uncles going to Mereen with a fleet. Think I'm going to leave it there!

Yeah, that's basically the whole Greyjoy plotline so far except that you don't have details about the Uncles (I imagine).

What fate do we think awaits Jon then. Plenty of theories flying about as you'd imagine.
People seem to think Melisandre will resurrect him, I don't buy that one. I think his story going forward will be different in the books than in the show, from what I've read about the books there's a chance he'll be around in spirit through his direwolf as his last utterance before being killed is "Ghost" and throughout the book he has shown the potential to warg like Bran. Then maybe taking back his physical form at a later date with a little help from Mel.
I don't think they'll go this route in the show though as he didn't say anything about Ghost. I'm torn between thinking he's actually just going to stay dead and the theory that as they inevitably burn his body he'll rise from the flames due to his probable Targaryen blood.
Then again I've never heard about flames bringing Targaryen's back from the dead.
Fuck it, he's probably dead.

Yea. Nothing much has been covered about the Greyjoy plotline so far.
Besides giving us Theon, not sure what else they have offered or will offer us in the future.
